Oat & Sunflower Seeds Crackers

Oat & Sunflower Seed Crackers are easy to make, even for the littlest of helping hands. They are also very tasty, healthy and perfect for lunchboxes and snacks at home (Do check your school's lunchbox policy as some prefer no seeds).

You can serve them with butter (so yum!), nut butter, houmous, or try out some of my topping ideas below.

I would even go as far as to say these Oat & Sunflower Seed Crackers deserve a place on your next fancy cheeseboard!

This recipe is a really great one to make with children for several reasons:

- Involving kids in cooking can help with fussy eating, and even fussy eaters often go for dry, crunchy textures above all else, so this recipe has a very strong success rate!

- I've put a lot of work in to making this dough very easy to handle, which means all ages should be able to get involved easily

- The recipe uses basic equipment (rolling pin, bowl, spoon etc) as some kids find the noise of food processors upsetting and most households can have both the equipment and ingredients easily to hand

- Children can add their own twist to these by using shaped cutters to make stars, hearts, ducks or whatever shape of cracker they like!

Ingredients:

1 cup / 80g Oats (Use Gluten Free Oats for Coeliac version)
½ cup / 60g Sunflower Seeds
½ cup / 60g Cornflour 
½ cup / 90ml Water
4 tbsp Olive Oil*
¼ tsp Salt (omit for babies under 1)
Extra cornflour for rolling

*Any lightly flavoured oil for cooking, or melted coconut oil will work also

Method:

Preheat oven to 180°C / 350°F. Crush the sunflower seeds by placing them
on the table and rolling over them with your rolling pin. Add the crushed sunflower seeds and all the other DRY ingredients to a mixing bowl. Mix well. Measure in the water and oil. Mix until a ball of dough forms. Scatter some cornflour on your work surface.
Tip out the dough, and begin to roll it out flat, using more cornflour if necessary. Roll as flat as you can. The dough should be about 2mm thick. Using a knife, pizza cutter or cookie cutters, cut the dough into whatever shaped crackers you prefer.
Place the crackers on two baking trays, leaving a little space between them. Place in the preheated oven for approx 15-20mins. The crackers should be just golden when done. Leave to cool for a few moments before moving to a wire tray. Let cool completely before eating
